Our Night at Ficoa: A Latin Heritage Tasting Menu Worth Experiencing

This fall, Ficoa in Toronto’s Little Italy is honoring Latin Heritage Month in the most delicious way possible — with a special six-course tasting menu that runs from September 17 to October 11.

Priced at $98 per guest, and with an optional $85 beverage pairing, the menu is the creation of Executive Chef Esau Garcia, who draws inspiration from the rich culinary traditions of Latin America. Each plate celebrates a different community, from the gauchos of South America to the coastal flavors of the Caribbean.

We were invited in for a tasting — and let us just say, it was incredible. Every dish felt like a story, carrying its own history and character while still feeling fresh and refined. The balance of flavours, textures, and presentation made the evening unforgettable.

On the menu:

  • Gauchos (Argentina, Paraguay, Brazil): Steak Tartare Asado, bold and smoky, capturing the essence of fire-roasted cooking.

  • Incas (Peru, Ecuador, Bolivia): Tiradito de Atún, a bright and refreshing nod to the Inca’s coastal influences.

  • Tainos (Cuba, Jamaica, Hispaniola): Yuca Negra with shrimp salsa brava and crab earth — earthy, briny, and comforting.

  • Yaquis (Northern Mexico): A creative take on Kokkoibaki with tender short ribs and a silky potato foam.

  • Mapuche (Chile, Argentina): Chilean Sea Bass with merkén beurre blanc — smoky, buttery perfection.

  • Guaraní (Paraguay, Brazil): Quibebe Burnt Basque Cheesecake, a beautifully rich finale.

Chef Esau has designed the menu to be more than a meal — it’s an experience that brings together history, heritage, and innovation. It’s a celebration of Latin culture you can truly taste.
